Sopes Recipe

This masa creation is available throughout Mexico, although variations in shapes and fillings do occur according to region. The recipe below is a hearty and satisfying way to spice up a party or begin an everyday meal.

Summer is here, V&V Supremo; one of the nation’s oldest family-run Hispanic food business, wants to share some authentic recipes to celebrate ¡a la Mexicana!

Sopes

Ingredients

1 Pkg. sopes
1 Pkg. chorizo, cooked
15 oz. sour cream
15 oz. queso fresco, crumbled
½ Cup corn oil
1 Head of lettuce, sliced
1 Medium tomato, diced
½ Cup cilantro, chopped
2 Cups refried beans

Preparation

    1. Heat oil in skillet over medium heat for about 3½ – 4 minutes.  Place as many sopes in pan as will fit in single layer. Fry on one side for 1½ minutes, flip and fry other side.
    2. Place finished sopes on paper towels. Line plates with lettuce, and fill each sope with 1½ tbsp. beans, 2 tbsp. cooked chorizo, ½ tbsp. sour cream, and ½ tbsp. queso fresco.  Top with chopped cilantro and tomato.

Yields 12 servings
