Honeysuckle Syrup

This is basically an infused simple syrup. Works wonderfully in tea, club soda, and in several baking recipes. 

You will need
4 cups gently pressed (not smashed down) honeysuckle blossoms
3 cups water
3 cups sugar
Heat water to a boil, add sugar and stir until dissolved. In a separate container place your clean flowers and pour the hot water and sugar mix over top. Stir gently to soak the flowers. Cover and allow to reach room temp. You should then put it into a fridge for 24 hours. I don't have that option, so into the creek it went.
After 24 hours, strain through cheese cloth.
Once infused, you can now use it in your drinks. If you would like to use it as a waffle or pancake syrup, slow roll the juice over a low heat, reducing the concoction by half. It will be a bueatiful golden color, thick and clingy. 
And yes, I realize that in this container it looks like an urine sample. (I didn't have cheese cloth, so it was strained through a normal colander. I will clean it up this afternoon for recipe insertion.)
I prefer working with honeysuckle extract, however that takes more time. I will post instruction on making that, so you can have a little springtime in the winter.
