Green potatoes are green because of the amounts of chlorophyll they contain. Researchers say the green potatoes have high amounts of solanine, which is believed to be a very poisonous chemical. Solanin can lead to nausea, headaches, diarrhea, vomiting, and other ailments. Solanine is a poisonous chemical that is naturally occurring in potatoes and other members of the nightshade family, like tomatoes and eggplants. This poison is found throughout the potato plant, especially green potatoes and new sprouts.
Potatoes produce small amounts of solanine as a natural defense against insects, diseases, and predators. But as levels increase due to sun exposure, it turns the potatoes green and makes them poisonous for consumption. So avoid cooking with green looking potatoes and discard any sprouts or eyes on the potato that appear to be green.
