I have been busy developing and writing some new recipes for my cookbook which is due out the end of April. Do you remember that there used to be a cookie called Coffee Creams? With a crisp biscuit/cookie on the outside and a coffee cream filling inside. They were rectangular. You don't seem to be able to find them anymore. With those in mind I have been trying to create a similar biscuit to enjoy. Darn it if these are even more delicious than the original!!! (Love it when that happens!) Oh well, back to the drawing board!
When I saw the contents of the latest Degustabox I knew that I wanted to bake something with some of the contents, one of them being a lovely looking instant coffee. We don't drink coffee, but there is nothing to prevent us from eating it so far as I know!

I could not try this as I am diabetic, but it would be a great occasional snack for children where it has less sugar and is natural.

No surprise this was the product I decided to highlight with a recipe!
Like I said I have been busy developing new recipes for the cookbook which is due out the end of April and this is one of the things I have been working on. I was really pleased with the way they turned out!
Crispy and buttey double layered biscuits/cookies, flavoured with coffee, rolled in chopped toasted walnuts before baking and sandwiched together with a delicious coffee buttercream icing. These were really, REALLY nice. Happy to say these made the cut! (A little preview of some of the tastiness you can expect in my new book!)
*Coffee and Walnut Creams*
Makes about 20 double cookies
These delicious cookies are very reminiscent of the cake by the same name. Deliciously moreish! Fabulous with your mid morning cuppa!
For the biscuits:
250g of butter (1 cup) at room temperature
190g of white sugar (1 cup)
110g of soft light brown sugar (1/2 cup, packed)
1 large free range egg
pinch salt
350g plain flour (2 1/2 cups)
2 tsp baking powder
4 heaped tsp of dry coffee powder dissolved in 60ml of hot water (1/4 cup)
(2 tsp of this mixture will be used in the cookie itself and 2 TBS in the filling)
115g of chopped walnuts (1 cup) (you will not want them to be too coarse, but also not really fine)
For the filling:
130g of confectioners sugar (1 cup icing or powdered sugar) sifted
4 TBS butter, room temperature
2 TBS of above mixture (coffee)
Preheat the oven to 190*C/375*F/ gas mark 5. Line several baking sheets with baking paper.
Cream together the butter and both sugars. Beat in the egg and 2 tsp of the coffee mixture. Sift together the salt, flour and baking powder. Stir into the creamed mixture to combine well. Roll the dough into walnut sized balls. Place the chopped walnuts in a bowl. Roll each ball into these and then place on the baking sheets, leaving 2 inches of space between for spreading. Flatten to about 1/3 inch gently. Sprinkle any remaining walnuts over top and lightly press to adhere. Bake in the preheated oven for 10 to 12 minutes, or just until the edges begin to brown. Let stand on the baking sheets for several minutes before scooping onto wire racks to cool completely.
Beat all of the filling ingredients together until smooth. Spread onto half of the baked biscuits on the bottom sides and then top with the other half of the baked biscuits, with the bottoms facing the filling. Store in an airtight container.
Note – you may have some coffee mix leftover. Just add boiling water and enjoy a cup!
