Chocolate Pineapple Skewers with Coconut and Pistachios

Fruit for dessert is one of my favorite things. When you put pineapple on the grill all of it’s natural sugars caramelize and become all kinds of wonderful. If that wasn’t enough, I decided to drizzle them with slowly melted bittersweet chocolate and sprinkle moist coconut shavings and chopped pistachios all over them. Hawaiian Heaven on a stick.
This months Recipe Redux we are simply pairing chocolate with our favorite foods. Not necessarily a recipe but foods that pair well with chocolate. Which got me to wondering, is there anything that chocolate couldn’t make better?
I mean honestly, chocolate + fruit, duh. Chocolate and popcorn, sure. Chocolate covered potato chips, yup, Chocolate and wine, obviously. How about chocolate with meat? Have you seen the movie Chocolate with Juliette Binoche? (girl crush) When she throws that birthday party for Madame Armande in the yard, she is slowly drizzling a chocolate sauce over what looks like Prime Rib. At first I was a bit put off but then I was like “PRIME RIB AND CHOCOLATE??????? AWWWW YEAH!
No recipe required! It just keeps getting better. Slice up a fresh pineapple. Impale them with skewers. Heat up your BBQ and let them get all delicious. Melt some good quality chocolate over very low heat. Drizzle. Dollop. Repeat. Eat.
