Egg salad sandwiches, deviled eggs and potato salads are some of my favorite things but when you have a surplus of hard boiled Easter eggs on your hands an intervention may be the best thing. Here are some surprisingly palatable and healthy eats starring eggs.
The great part about eggs is that they are practically perfect little orbs of vitamin-packed protein. Not only do they have vitamins B6 and B12, which are great for energy and moods, but they have vitamin D (the sunshine vitamin), and vitamin A, which is excellent for skin and nails. They are an affordable source of protein that can be added to almost any meal.
I love the versatility of eggs and love to add them to any last minute dish that will fill me up in a hurry. Like this tangy tomato, cucumber and chickpea salad with soft boiled eggs.
