Joy Bauer’s new soft cover book, Slim & Scrumptious (William Morrow/2010) has more than 75 delicious and healthy meals for families. I tested a couple of the recipes to be sure. And yes, I’d agree, they’re both tasty and healthy.
The recipes are a variety, ranging from breakfast to pasta entrees, to sweets. Many of the traditional favorites are reinvented and served up in a healthier form. For example, the Spicy Shrimp Jambalaya uses brown rice instead of white. That’s the key, familiarize yourself with nutritional substitutes that our grandparents probably used prior to the “invention” of refined grains and flours.
I tested the Soft-Baked Chocolate-Cherry Oatmeal Cookies (since I’m a cookie lover). The mixture calls for oatmeal (rolled oats) and whole wheat flour, dried cherries and dark chocolate. They’re wonderful! Dunk them in the morning coffee!

Another trick Joy Bauer uses is the substitution of lean ground turkey for fatter meat–Mediterranean Meatloaf, Meatballs, etc.. The meatloaf is pumped up with healthy vegetables. AJ’s Mac-N-Cheezy is a recipe promise to the author’s youngest child. Now this I favor. I have yet to meet a child who would skip mac-n-cheese. Bauer incorporates whole wheat pasta and reduced fat cheese. There’s a photo of the dish on the cover–it does indeed look yummy! (Photos by Joseph De Leo)
Recipes include a nutritional breakdown analysis: Calories, Protein, Carbs, Fat, etc..I recommend Slim & Scrumptious as a terrific cookbook for any beginning cook, kids, or anyone who’d like to makeover family favorites.
