Happy Monday, y’all! We had a lazy weekend and enjoyed every moment of it. It’s cooled off drastically here and it’s the perfect time to break out our favorite soup recipes! 
I love my crockpot and Fall weather is a perfect time to use it! 
My mom actually shared this recipe with me, so you can certainly thank her. 
Cabbage Soup
Did you just cringe at the idea? When I think cabbage soup, my mind automatically goes to the cabbage soup diet and how restrictive it sounds. I envision water and cabbage boiled together for hours. I literally shudder at the idea of something called cabbage soup. I mean, seriously, that mess can’t be good…. Can it? 
My mom made a batch of cabbage soup and sent some to us. I was totally skeptical. I put it off for a day or so. When I warmed it up, I realized it smelled amazing. And there was plenty of stuff mixed in with the cabbage… And when I finally tried it? Soooo good! 

I had to have her recipe! 
Not only does it taste amazing, it’s so simple.

I cooked some bacon in a skillet and added chopped carrots to it. While that sauteed together, I poured everything else in my crockpot… 3 boxes of organic beef broth, three cans of black eye peas (rinsed well), two cans of petite diced tomatoes (drained), one head of cabbage (chopped), and two packs of turkey sausage (sliced). Once the bacon and carrots are cooked, drain the grease, and add them to the soup. Cook on low for 8 hours. 
It’s seriously that easy. Plenty of protein, plenty of veggies, and tons of flavor. 
I use a huge slow cooker for this soup and it gives me plenty of soup for lunches through the week. Ryan and I have four days worth to share after having it for dinner one evening. That’s a bunch of healthy soup! 
You can use low sodium broth and skip the bacon if you wish, but I like it just fine the way it is. Totally up to you!
