My Fat Free, Low Calorie Refried Bean Soup was born during a cold, icy, snowy week in Tennessee. I love soup during the winter. It’s quick, easy and comforting on the coldest days. Y’all won’t believe how incredibly simple this is.
I made enough for three big meals for my guys. I froze one batch, we ate one, and I have leftovers for lunch.
You’ll need:
2 Cans of Fat Free Refried Beans
2 Can of Black Beans, Rinsed and Drained
1 Can of While Corn, Drained
2 Cans of Fire Roasted Diced Tomatoes
1 Cup of Organic Salsa
2 Cups of Beef Stock
1/2 Sliced Jalapeno
1 Cup of Water
You literally put all of that in a big soup pot and bring to a boil. That’s it. Done!
