The reason is simple: geologists mistook fossilized cells/tissues for minerals. 

Examples:

1. Red blood cell remains were identified as geologic vesicles.

2. Blood vessel remains were identified as olivines, veins of rock, or fracture fills.

3. Neuron remains were identified as pyroxenes.

4. Skeletal muscle cell remains were identified as feldspar plagioclase.
