Annette Goodwin asks: “Can anyone recommend the best source for how to store food safely for the a long period? There are many books available on the subject and I would like to know if anyone has a preference.”
Commenter 1: “It would be helpful to know what you want to store, and what you want to eat. Tinned stuff lasts a long time, but canning itself can present it’s own problems. Of course things like meat and produce could be dried, salted, smoked, even jarred. As far as grains and the like, the processed “white” foods last for quite a long time and longer than their unprocessed counterparts, but nutritional value isn’t nearly as good in the processed foods. Hard cheeses last longer than soft. Condensed milk was created to provide milk in areas that lack refrigeration. Freeze-dried is good, but expensive, and I’ve also found certain brands/foods to be VERY salty. The rule to most food storage is cool, dry and keep it away from light if possible. We picked up 2 flats of wide-mouth Mason jars and they’re great, not just for long-term storage, but for things like saving soup stock to freeze. But in conjunction with all of this, I’d say instead of storing food (finite, unsustainable if TSHTF), learn to grow food. Learn about indigenous foods. Research Permaculture. Learn to cook, and how foods work together. You might be surprised at the opportunities that open up when you adjust the perspective on the issue.”
