You could skip cutting this into bite size pieces and pack it for your lunch as a healthy wrap. These went great with fresh, crisp grapes.
TIME 10 MINUTES SERVES 4-6 AS AN APPETIZERYou Will Need
4 Sprouted Whole Grain Wraps such as Ezekiel
2 cans chickpeas, drained and rinsed
1-2 tablespoons water
3/4 cup of your favorite Buffalo Sauce
handful of baby spinach, torn into pieces
1 cup shredded Colby Jack cheeseMETHOD
In the bowl of a food processor, pulse the chickpeas until just smooth adding a bit of water if needed. Don’t over process (like I did). You want a bit of consistency to these. Stir in the Buffalo sauce to combine. Spread the mixture on your wraps and top with spinach and cheese. Roll up as tightly as possible like burrito, pushing in any wayward ingredients as you go. Cut into bite size pieces and serve.
You could definitely heat these up in the oven for a crunchier, hotter appetizer!!
Serve with fresh fruits and vegetables.
