Prepared this healthy colourful salad with leftover cabbage, carrot and some fresh fruits as light lunch yesterday. It was so refreshing and satisfying that I almost finished up the whole bowl all by myself! In fact, there’s no exact measurements for the ingredients, just chop all the ingredients and toss them well with lemon juice and mayonnaise. Then serve.

Colourful Salad
Ingredients:
300g cabbage
1 stick carrot
1 red apple
lemon juice
red/yellow kiwifruit
grapes
lemon juice to taste
mayonnaise to taste
coriander leaves

芫荽,适量
Method 做法:
Chop fruits into pieces and shred cabbage and carrot finely.
水果切成小块,高丽菜和胡萝卜切细条丝。
Toss well with chopped coriander leaves and add -3 tablespoon lemon juice 挤入1-3汤匙柠檬汁和适量的芫荽一起拌匀。
Add mayonnaise to taste, mix well to combine and serve immediately. 淋上适量的美奶滋,拌匀即可享用。
